
In 2009, I am trying to stay healthy, but without driving myself crazy. No unattainable goals and subsequent let down, no daily scale checks or banishment of carbs. Just a promise to eat well and be more active. In addition to cooking at home as often as possible, I am starting to work out with a trainer tonight. Hopefully this salad recipe, which I had for both dinner last night (with chicken) and lunch today (vegetarian), gets me through the workout! And hopefully, my trainer will be more Bob than Jillian…
You might notice, I dont have a exact amounts for most of the salad ingredients. Just add lots of what you love, some of what you like and none of what you dislike.
Greek Chicken, Spinach and Orzo Salad
*Marinate chicken breasts for 1-3 hours in a mixture of:
Fresh squeezed lemon juice
Olive Oil
Fresh Oregano
Garlic
Salt and Pepper
*Grill chicken until cooked thoroughly, 10-15 minutes.
*Whisk the following into a small bowl:
5 TB Olive oil
2 TB Red wine vinegar
1 clove minced garlic
1 tsp dried oregano
½ lemon, juiced
½ tsp sugar
Salt and pepper
*Cook one cup of orzo according to package directions, cool, and then combine with:
Baby spinach
Tomatoes
Red onion
Pitted kalamata olives
Marinated artichoke hearts
Crumbled feta cheese
*Pour dressing over orzo/veggie mixture and toss to coat. Top with grilled chicken.

This sounds so good! I’m sitting here wondering what to make for dinner tonight and this is making my mouth water!
